Preparation of the Buffalo Tomato Burrata
1. Prepare the tomato:
- Gently wash the large tomato under cold running water and pat dry.
- Cut the tomato into 4 equal wedges without going all the way to the bottom, so that it remains attached and forms an open "flower" base.
- Place in the center of a large dish or soup plate.
2. Prepare the burrata :
- Drain the burratas and leave to cool at room temperature for a few minutes to reveal their creamy texture.
- Carefully cut each burrata in half and arrange the pieces around or in the center of the tomato, respecting the "flower" shape.
3. Add seasonings:
- Generously drizzle vanilla oil over the tomatoes and burrata.
- Add a dash of lemon juice for a light acidity.
- Sprinkle with fleur de sel, black pepper and toasted sesame seeds.
4. Sublimate the dish:
- Arrange the Parmesan shavings harmoniously over the tomato and around the burrata.
- Add a few licorice basil leaves for an aromatic touch and a slightly aniseed note.

Serve the tomato on a large white or slate plate to accentuate the color contrast. Place the burratas between the tomato wedges for an impressive visual effect.
